The rare and sweetest dragon fruit.
The yellow pitahaya has a bright yellow thick scaly skin. The fruit is smaller than the red and pink variety. The flesh of the yellow pitahaya is white and contains many small black edible seeds. The flesh is juicy and sweeter than the flesh of the other pitahaya varieties.
Yellow pitahayas are kept refrigerated in storage and during transport. The ideal temperature during transport is 10 degrees Celsius. At home the yellow pitahaya needs to be kept out of the fridge.
